1 cup shredded unsweetened coconut

1/3 cup olive oil

1/2 cup milk, I use almond or soy
3/4 cup brown sugar
A few dashes of Cinnamon
4 teaspoons cocoa
1/3 cup Organic peanut butter or almond butter
1 1/2 teaspoons pure vanilla extract
3 cups oats, I use old-fashioned
Directions:
Mix the butter, banana, milk, cocoa cinnamon and sugar in a big saucepan, bring to a boil, boil for 3 minutes and remove it from heat. Add the peanut butter, vanilla and oats. Drop giant spoonfuls onto a wax paper and put them in the fridge for 4 hours.
